Lemon-Pepper Parmesan Fries


Yield: 96 - 1/4 oz. portions

Ingredients


Lemon-Pepper Parmesan Mix:
  • 4oz Fresh lemon peel; Finely Chopped
  • 4oz Black Pepper; Fine Grind
  • 16oz Italian Parmesan Cheese; Grated Fine
Fries:
  • 6oz Potatoes, Idaho, Skin on; 3/16" cut strips
  • Oil; Blended; Canola-Peanut-Corn


Directions


Lemon-Pepper Parmesan Mix:
  1. Toss all ingredients in a bowl. Sprinkle onto deep fried fries as needed.
Fries:
  1. Deep fry potato fries at 350 until crisp. Season with lemon-pepper-parmesan mix and serve at once.
