IdahoŽ Potato-Pesto Squares


Yield: 6 servings

Ingredients


  • 1 7.75-ounce box complete instant mashed Idaho Potato flakes
  • 6 tablespoons purchased pesto sauce 


  • Optional: 
Cracked pepper


Directions


  1. Prepare campfire or grill fitted with cooking rack approximately 8 inches from the heat. Line a 9 X 9-inch pan with foil.
  2. Prepare potatoes according to package directions. Spread 1/4 of potatoes in the pan. Top with 2 tablespoons of the pesto, spreading it evenly over potatoes. Repeat twice. Top with the last 1/4 of potatoes and sprinkle with pepper, if desired.
  3. Cover entire pan with foil (top and bottom) and cook about 8 minutes. Turn pan half-way and cook another 8 - 10 minutes. Remove pan from heat, let cool slightly, then cut into squares and serve.
