Bubble and Squeak

Blue Ribbon Bistro, Meridian, ID


Ingredients:
  • 5 pounds Mashed potatoes
  • 1 1/2 pounds sauerkraut
  • As needed Clarified butter


Directions:
    Hand mix potatoes with sauerkraut.
    Form 3 oz. cakes and brown in butter.


Lemon Caper Butter

Ingredients:
  • 1 pound butter
  • 1 t Lemon juice
  • 1 T Chopped lemon Zest
  • To taste Salt and White pepper
  • 1/4 cup Capers

Directions:
    Whip butter with juice, zest and seasoning.
    Fold in capers.
    Wrap in cylinders and chill.
    Portion medallions as needed.
