Bubble and Squeak

Ingredients


  • 5 pounds Mashed potatoes
  • 1 1/2 pounds sauerkraut
  • As needed Clarified butter
Lemon Caper Butter
  • 1 pound butter
  • 1 t Lemon juice
  • 1 T Chopped lemon Zest
  • To taste Salt and White pepper
  • 1/4 cup Capers


Directions


  1. Hand mix potatoes with sauerkraut. 
  2. Form 3 oz. cakes and brown in butter.
Lemon Caper Butter
  1. Whip butter with juice, zest and seasoning.
  2. Fold in capers. 
  3. Wrap in cylinders and chill.
  4. Portion medallions as needed.
