Bubble and Squeak

Blue Ribbon Bistro, Meridian, ID
Ingredients:
- 5 pounds Mashed potatoes
- 1 1/2 pounds sauerkraut
- As needed Clarified butter
Directions:
Hand mix potatoes with sauerkraut.
Form 3 oz. cakes and brown in butter.
Lemon Caper Butter
Ingredients:
- 1 pound butter
- 1 t Lemon juice
- 1 T Chopped lemon Zest
- To taste Salt and White pepper
- 1/4 cup Capers
Directions:
Whip butter with juice, zest and seasoning.
Fold in capers.
Wrap in cylinders and chill.
Portion medallions as needed.
