Bubble and Squeak

Ingredients
- 5 pounds Mashed potatoes
- 1 1/2 pounds sauerkraut
- As needed Clarified butter
Lemon Caper Butter- 1 pound butter
- 1 t Lemon juice
- 1 T Chopped lemon Zest
- To taste Salt and White pepper
- 1/4 cup Capers
Directions
- Hand mix potatoes with sauerkraut.
- Form 3 oz. cakes and brown in butter.
Lemon Caper Butter
- Whip butter with juice, zest and seasoning.
- Fold in capers.
- Wrap in cylinders and chill.
- Portion medallions as needed.
