IdahoŽ Potato Crab Tator Tots

Yield: Yields approx. 100.

Ingredients:
    12 Idaho Potatoes, boiled and mashed
    2 lbs. Lump crabmeat
    2 Qts. Panko breadcrumbs, divided
    Salt and Pepper, to taste


Directions:
    Combine mashed potatoes, crab meat and 1 Qt. breadcrumbs, mix thoroughly. Roll mixture into balls. Roll balls in remaining 1 Qt. breadcrumbs. Fry at 350°F until golden brown.
