Chile IdahoŽ Potatoes

Yield: 4 servings

Ingredients


  • Large Idaho potatoes, peeled, washed and sliced thinly
  • 1T Tomato paste
  • 2T Garlic Puree
  • 1T Chipotle in Adobo puree
  • 1T Smoked paprika
  • 1C Whole milk
  • 1C Heavy cream
  • 1C Cheddar cheese
  • Salt & black pepper to taste


Directions


  1. Combine all ingredients and season with salt and pepper to taste.
  2. Place ingredients into a gratin dish. Bake in a 350 degree F oven until potatoes are tender, or approximately 30 minutes.
  3. Serve hot.
