Shrimp, Bacon and Chive IdahoŽ Potato Salad

Ingredients


  • 4 Idaho® Potatoes, washed, baked, peeled and cut into 3/4 inch cubes
  • 1/2 pound shrimp, cooked, chopped
  • 1/2 pound bacon, cooked and diced
  • 2 tablespoons chives, sliced
  • 1/2 cup sour cream
  • 1 cup mayonnaise
  • 1/2 cup Crème Fraiche
  • 2 tablespoons basil
  • 1/2 ounce lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1/2 cup honey
  • 2 tablespoons whole grain mustard
  • 1 teaspoon Ancho Chile powder
  • To taste salt and black pepper


Directions


  1. In a bowl prepare the dressing by mixing the sour cream, Crème Fraiche, mayonnaise, lemon juice, basil, Old Bay seasoning, whole grain mustard, honey, Ancho powder, salt and black pepper. Fold in the potatoes, shrimp, bacon, chives & adjust seasoning to taste.
