Golden Valley Mashed Potato Casserole


Yield: Approximately 10 servings

Ingredients


  • 8 servings Instant Mashed Idaho Potatoes-prepared
  • 1/2 cup Yellow onion, diced
  • 15 oz. Whole kernel corn-canned-drained
  • 8 oz. Bacon-diced
  • 1/2 cup Green pepper, diced
  • 1/4 tsp. Black pepper


Directions


  1. Prepare Instant Mashed Idaho Potatoes.
  2. Sauté bacon, drain excess drippings.
  3. Combine potato mixture, cooked bacon, whole kernel corn, diced green peppers and black pepper.
  4. Place blended mixture into suitable casserole dish.
  5. Bake at 350° F for 15 minutes, covered.
