Potato Farm Egg Salad
Ingredients
- 1 Idaho Potato Baked
- 1 Egg, hard-cooked
- 1 Red beet, baked
- 1 oz Fresh basil
- 3 oz Balsamic dressing (recipe follows)
Balsamic Dressing
- 1/2 cup Balsamic vinegar
- 1 tsp Red wine vinegar
- 1 Thsp Dijon mustard
- 1 Tbsp Mayonnaise
- Salt & pepper to taste
- 3/4 cup olive oil
Directions
- Refrigerate potato, egg and beet overnight. Slice into rounds and arrange plate. Spinkle with basil and dressing.
- To make dressing, thoroughly combine vinegars, mustard, mayonnaise, and salt and pepper. Continue mixing slowly adding olive oil.
