Potato Farm Egg Salad


Ingredients


  • 1 Idaho Potato Baked
  • 1 Egg, hard-cooked
  • 1 Red beet, baked
  • 1 oz Fresh basil
  • 3 oz Balsamic dressing (recipe follows)
Balsamic Dressing
  • 1/2 cup Balsamic vinegar
  • 1 tsp Red wine vinegar
  • 1 Thsp Dijon mustard
  • 1 Tbsp Mayonnaise
  • Salt & pepper to taste
  • 3/4 cup olive oil


Directions


  1. Refrigerate potato, egg and beet overnight. Slice into rounds and arrange plate. Spinkle with basil and dressing.
  2. To make dressing, thoroughly combine vinegars, mustard, mayonnaise, and salt and pepper. Continue mixing slowly adding olive oil.
