White Cheddar/Chipotle Smashed Potatoes

Yield: 6 portions

Ingredients


  • 2 lbs. Idaho® russet potatoes, cut into chunks and cooked until tender
  • 3/4 to 1 cup hot milk or half and half
  • 2 Tbs. butter
  • 2 Tbs. sour cream
  • 1 tsp. kosher salt, or to taste
  • 1 cup shredded extra-sharp White Cheddar cheese
  • 2+ Tbs. chipotle sauce (Cholua)


Directions


  1. Strain potatoes.
  2. Smash potatoes with potato masher; add other ingredients
  3. Mix well but leave a little chunky.
  4. Serve hot.
