To keep hashbrowns or small cubed potatoes from burning when frying, soak them in cool water first, 15 minutes, or even overnight.

I love to cut up my potatoes steak fry style throw them in a plastic produce bag with olive oil, fresh thyme, dill, garlic powder, and chili powder. I shake up all until coated throw em' in a baking pan and throw em' in the oven for 40 minutes! I then dip em' in homemade chipotle ketchup!

OLD FASHIONED CURE: Scrape a potato and place scrapings (doesn't take a lot) on gauze square. Tape gauze over heat bumps, boils, etc. and leave overnight. The drying starch in the potato will pull the infection from the body. Not to mention the coolness of the scrapings relieve the heat.

When making Garlic Mashed Potatoes, while the water is boiling add a few crushed garlic cloves to the water it enhances the potatoes and then you won't have to add it later on.

Create "Idaho Eggs Benedict" by slicing an Idaho potato into 1/2 inch rounds, and fry on both sides until golden brown, cripsy on the outside, and soft in the middle. Pile high with eggs, diced sauteed ham, cheddar cheese, and green chile. Voile!

For a tasty fried potato without all the fat and grease, put your sliced potatoes along with one medium sliced onion on a cookie sheet sprayed with cooking spray. Bake @ 425 degrees for 30 minutes. The potatoes taste as good as if you fried them, but the are much healhier.
