Can You Share One Of The Best Left Over Mashed Potato Recipes That You Know?

Q:

I always make extra Idaho® mashed potatoes because they are always so popular as left overs the next day. Any suggestions on new ways to make an exciting dish that will make people comment… that’s the best left over mashed potatoes I ever had?

A:

I often look to chefs and restaurants for inspiration and these left over loaded mashed potatoes are the best. The first time I was served this mashed potato at a restaurant I had to have the recipe! Make sure you have all the rest of the ingredients on hand: bacon, Spanish onions, spring onions or scallions, lots of cheddar cheese (I like to use Tillamook sharp cheddar), and olive oil. Start with a cast iron skillet to have these turn out the very best. Re-fried Mashed Idaho potatoes go really well with left-over turkey or a pork tenderloin.
