Famous Idaho® Potato Truck Tour

The Famous Idaho® Potato Tour is back on the road! The first stop on the Tour was the McDonald’s Children’s Festival in Houston benefiting Child Advocates. There were more than 50,000 attendees, many under the age of 10! In North Carolina, the Tater Team spent Easter Sunday serving dinner at the Durham Rescue Mission. Ask Dr. Potato:  What can I do with Idaho® Fingerling potatoes to make them taste unique for my guests?

A: Those cute little marble-size, colorful fingerlings like the Russian Bananas, Purple Peruvians and French Fingerlings taste great in just about any dish. For quick and easy, steam or boil them, then dice and add to your favorite salad. Or, you can toss in olive oil, sprinkle with salt and pepper and roast them in the oven. Recently a group of restaurant chefs took on the challenge to do something a little different with these tiny morsels of flavor. One team poached their Purple Peruvian potatoes in clarified butter and aromatics resulting in a delicious confit-like dish. Perhaps the most unusual creation was a chef's interpretation of potato salsa. Boiled French Fingerlings were cooled, drizzled with fresh lime juice and cut into small chunks. Diced tomatoes and other herbs were added and served over a deconstructed traditional Mexican dish.
