Featured Farmer: Doug Case

This month’s featured Idaho® potato farmer is Doug Case. From Blackfoot, Idaho, Case is a fourth-generation potato farmer, currently working on the farm started by his wife Robyn’s father and grandfather. He’s proud of being a potato farmer because it’s hard work; he and his fellow farmers wake up very early every morning to get the job done. While there is no wrong way to eat an Idaho potato, Doug’s favorite dish is twice-baked potatoes.

Steak and Blue Cheese Kettle Chips

Check out this awesome Idaho potato recipe courtesy of Over The Fire Cooking with Derek Wolf! Russet potatoes are used to make homemade chips that are the star of this appetizer or entree – depending on how hungry you are! Grilled hanger steaks and homemade blue cheese are layered on top of the chips. Blue cheese crumbles, bacon bits, diced red onions, and chopped scallions add bursts of color, flavor, and crunch! Bonus: no utensils needed…but have a few extra napkins handy!

Yellow Curry Idaho® Potato Bowl with Tofu

This Yellow Curry Idaho® Potato Bowl with Tofu is packed full of amazing textures and flavors that create an unforgettable meal. Season the potatoes with curry powder, salt, and olive oil and bake for 35 minutes, turning at the halfway point. While the potatoes are cooking, dice the tofu into cubes and let sit for 15 minutes. Once dry, heat a large pan with canola oil and fry the tofu cubes for 6 to 8 minutes until light brown. Peel the carrots, slice the peppers, and mix the dressing while the potatoes finish. Once out of the oven, assemble your Yellow Curry Idaho® Potato Bowl with the prepared vegetables and chosen garnishes.

Ask Dr. Potato

Q: How should I store leftover, fresh-cut french fries?

A: In the olden days, chefs would leave the potatoes out at room temperature. Today, most foodservice operators and health departments will require that once cooled to room temperature, the fries should immediately be refrigerated.
