Ask Dr. Potato: How Far In Advance Should I Slice Potatoes Before They'll Begin to Darken?

A: The trick to preventing freshly sliced potatoes from darkening is to slice and drop them into a bowl of acidic water. My “go to” choices are adding a little white wine vinegar or concentrated lemon juice to the water. If they begin to darken before you’re able to add them to the solution, don’t worry. You can return them to their natural color by soaking them for at least 5-10 minutes. Make sure you drain and rinse them before using. Find more potato tips and tricks on the IPC website…>
