This recipe for French Potato Salad is loaded with fresh herbs like tarragon, parsley, and chives and dressed in the most flavorful Dijon vinaigrette you may have ever tasted. It’s vegan, doesn’t have mayo and is quick and easy to make. Pro tip: Use small, thin-skinned Idaho® potatoes--they cook quicker and more evenly. Idaho grows more than 25 varieties including fingerlings, Yukon Golds and Purple Peruvians. We recommend using as many different varieties as you can in this salad to add texture, color and a flavor!
