Idaho Potato Commission Announces Russet Recipe Rescues

Five Winning Recipes Shed Calories and Fat, Gain Nutrition and Boost Flavor

EAGLE, Idaho, February 4, 2014—The Idaho Potato Commission (IPC) comes to the rescue! As part of its Russet Recipe Rescue competition, IPC selected a handful winning recipes in the greatest need of a rescue and remade them to trim calories and fat and gain nutrition while maintaining their delicious flavor.

The recipe makeovers allow the healthfulness of Idaho® potatoes to shine through. “Hundreds of people from across the country sent us their favorite recipes, knowing that they were in dire need of a nutrition fix,” said Frank Muir, President and CEO, IPC. “Our rescues show that Idaho® potatoes can play an important role in maintaining a healthy lifestyle, as long as they are paired with the right recipe partners.”

“We chose five very different recipes to showcase the versatility of potatoes,” explained Mindy Hermann, Registered Dietitian. “Once we remade the recipes, their strong nutrition profile and delicious flavor became obvious.”
